Ok so my obsession with Nordstrom Cafe’s shrimp and arugula salad is beyond crazy. It is seriously my number one reason to visit this store. This amazing salad is tossed with grilled corn, shrimp, plump grape tomatoes, and oven warm polentas. YUMMY!!!
The reality is I can’t always make it to Nordstrom to feed my cravings and the almost $15 dollar price can quickly add up. I had to figure out how to make this salad at home. The first stop was to the local grocery store to find the biggest shrimp in the fresh seafood department. Grab a bag of arugula salad or mixed greens. Either of these two will do the trick. Now if you are busy like me you may not have time to cut ears of corn so I just use a bag of frozen corn and sautee on the stove. To make this salad have the kick you want you must find the perfect salad dressing or either create your own. Luckily, I found a roasted garlic balsamic vinaigrette from Fresh Market that mixed perfectly.
